2 cups cooked dried chickpeas cooled
1 large diced honey crisp apple
1/2 cup slivered almonds
3-4 scallions chopped using both white and green
1/2 tsp red pepper flakes
1/2 cup vegan mayo
1/2 tsp kosher salt
1/2 tsp white pepper
Directions in a large bowl add chick peas and mash approximately half using the back of a fork or potato masher..You may also want to simply “pulse@ them in a food processor, just be sure not to over mix..slowly add remaining ingredients leaving mayo for the end. Adjust mayo according to desired consistency. Mix well and adjust seasonings.
Serve with summer tomato, micro greens and a thin sliced kosher pickle.
