Purple Carrot and Macadamia Salad with Dried Blueberries and a Sesame Ginger Dressing

Ingredients for salad
I bunch organic peeled purple carrots sliced matchstick size
1 cup macadamia nuts
1/2 cup dried blueberries
1/4 cup golden raisins
1 small handful of micro greens
Sesame seeds to garnish
Salt /pepper to taste

Ingredients for dressing
5 tbsp toasted sesame oil
3 tbsp soy sauce
3 tbsp rice wine vinegar
2 tbsp brown sugar
3 cloves minced garlic
1 tbsp minced ginger
1/4 tsp crushed red pepper

Directions…In a large mixing bowl slowly add salad ingredients (except sesame seeds) and gently fold.  In a medium glass by whisk dressing ingredients until well incorporated. Add just enough dressing to coat the salad and mix well. Serve immediately and garnish with white sesame seeds.
