Black Bean & Mango “Aloha” Burger with Pineapple Slaw

Ingredients:
16 ounces organic Black Beans Rinsed and Drained
2 scallions chopped white and green
2 tbsp diced roasted red pepper
2 tbsp diced green peppers
8 Tbsp small diced fresh mango
1 clove chopped garlic
3/4 tbsp ground cumin
1/2 tsp kosher salt
1 1/4 cup breadcrumbs
2 tbsp pure pumpkin

Directions:

In a large mixing bowl starting with black beans.  Using the back of a fork break about 1/2 the beans then slowly add both peppers, mango, scallions, garlic, cumin and salt mixing well after each addition.   Add pumpkin and breadcrumbs until desired consistency is reached.  The texture should be that of a packed snowball.  Form into desired patty size and heat a well greased grill on medium.  Cook for approximately 3 minutes per side until char marks have formed.  Serve immediately topped with Pineapple Slaw

Ingredients for Pineapple Slaw
Small handful micro greens
1/4 thin sliced red onion
2 scallions sliced white and green
1/4 thin sliced green pepper
1/2 cup thin sliced pineapple
1/4 cup chopped radicchio
1 tbsp extra virgin olive oil
Splash rice wine vinegar
1/4 tsp kosher salt

Directions:

In a small mixing bowl combine all ingredients and allow to sit for a few minutes.  Spread evenly over burger.
