Thin Crust Authentic Asian Pizza with Chili Pesto, Wilted Baby Bok Choy, Asian Eggplant & Enoki Mushrooms topped with Fresh Ginger & Drizzled with Chili Oil


1 fresh 10″ pizza dough rolled thin…for fresh pizza dough (search our site for our Scratch Made Pizza Dough video & recipe)
2-3 heads of baby bok choy chopped and wilted
1 Chinese eggplant diced, sautéed with sesame oil and cooked until almost tender
1 small handful of enoki mushrooms tossed with sesame oil
2-3 tbsp chili Pesto
1/2 red pepper thin sliced
1 tsp fresh grated ginger
3 cloves chopped garlic


Preheat oven to 450 degrees.  Roll out dough and transfer to a pizza peel coated with cornmeal to help slide onto a pizza stone.  Start by coating lightly with chili pesto.  Drizzle with sesame oil and slowly add remaining ingredients to top according to taste.  Season with salt and pepper and bake approximately 10-12 minutes or until crust is golden brown.  Serve immediately
