Fresh Fig, Watercress and Pistachio Salad with Yellow Pepper and a Lemony Viaigrette

Ingredients For Salad

1 large bunch fresh watercress

4-5 fresh figs quartered

1/4 red onion thin sliced

1/4 yellow pepper thin sliced

3/8 cup raw, unshelled pistachio

Dressing

1/4 cup extra virgin olive oil

1 lemon juiced and seated

1 clove minced garlic

1/8 cup champagne vinegar

1/2 tsp Dijon mustard

1/8 tsp kosher salt

1/8 tsp black pepper

Directions for salad. In a large mixing bowl starting with watercress, slowly fold in remaining ingredients

Directions for dressing in a small bowl whisk together all ingredients.  Adjust seasoning.  Gently coat salad.  Serve immediately
