Morning Breakfast Bowl with Bulgar Wheat, Plumcot, Blueberries & Pecans

Ingredients (Serves 2)
2 cups cooked bulgur wheat
1 Plumcot thin sliced
1/4 Red Pepper…thin sliced
2 tbsp fresh mint roughly chopped
1/4 cup fresh blueberries
2 tbsp chopped red onion
1/2 avocado diced
1/4 cup crushed pecans
Juice of 1 lemon
1 tbsp extra virgin olive oil
1/2 tsp kosher salt
1/8 tsp white pepper

Directions.. In a large mixing bowl starting with bulgur wheat slowly add remaining ingredients one at a time until well incorporated.. check for seasoning.. Serve immediately.. Tips.. Drizzle real maple syrup to add a little sweetness.. Enjoy!
