Poblano Homefries – Grilled Redskin Potatoes & Poblano Peppers with Shallots and Fresh Herbs


4 cups cooked red skin potato (skin on) cut into thin 1/2 moon pieces
2 small red onion diced
1 poblano pepper seeded and diced
1 tablespoon fresh oregano
1 tablespoon fresh thyme
1/2 tsp kosher salt
1/4 tsp white pepper

Directions.. in a lightly oiled sauté pan add onion and poblano and cook 2-3 minutes until they begin to brown.. add potato and cook additional 4 minutes or until potatoes begin to brown.. add salt, pepper and herbs.. mix well for 1 minute.. Remove from heat and serve immediately.
