Marinated Fried Chinese Eggplant “Sushi” w Spicy Peanut Dipping Sauce

Ingredients
2 Chinese eggplants cleaned and cut into 2″ rounds (skin on)
1/4 yellow pepper cut into 1″ matchstick pieces
1/4 red bell pepper cut into 1″matchstick pieces
1/2 small red beet cut into 1″ matchstick pieces
Sesame seeds for garnish

Marinade
1/4 cup rice wine vinegar
1/4 cup dark soy sauce
3 cloves minced garlic
1/2 tsp minced ginger
1/4 cup toasted sesame oil

Combine and set aside.

Spicy dipping sauce
3 tbsp soy sauce
1 lime juice and zest
1/3 cup water
1/3 cup creamy all natural peanut butter
1/2 cup hoisin sauce
Few dashes of hot sauce
1 clove minced garlic 1/2 tsp minced ginger
Place all ingredients in a food processor until smooth

Directions for Eggplant

Place sliced eggplant rounds into a sealed bag or bow with an air tight lid.  Cover with marinade and allow to sit refrigerated for 20-30 minutes minimum.  Heat a nonstick pan on medium heal coated lightly with oil.  Place eggplant down and cook approximately 3 minutes per side or until golden brown..turn and repeat. Remove from heat and allow to cool..hollow out a tiny hole in the center with a pairing knife and fill with vegetables

Garnish with sesame seeds and serve with dipping sauce.  Don’t forget the chopsticks!
