Grilled Tomatillo Pasta Salad


1 lb orrichette pasta cooked al dente and cooled
1 cup grilled sliced red onion
1 cup organic black beans
1 1/4 cup sliced Baby heirloom tomato
1/2 cup diced roasted red pepper
1 cup grilled corn
1/4 cup sliced scallions
1 1/2 cups tomatillo salsa (search tomatillo to view video at
2 tbsp chopped chives
1/2 tsp kosher salt
1/4 tsp black pepper


In a large mixing bowl add pasta and salsa and distribute well..slowly add remaining ingredients and incorporate well after each addition..Serve immediately!

Tips…add diced Avocado or a few dashes of hot sauce for a little heat
