Bayou Burger


1 cup cooked Black eyed Peas
1/2 cup cooked, chopped collard greens
1/4 cup grilled chopped red onion
1/8 cup diced pimientos
4 cloves roasted garlic chopped
1/4 cup chopped pecans
1/8 cup diced yellow pepper
6 dashes of hot sauce
2 large tbsp pure pumpkin
3/4 cup breadcrumbs
1 tsp pure maple syrup
1/2 tsp kosher salt
1/8 tsp black pepper

Directions…In a large mixing bowl starting with Black Eyed Peas gently break some of the beans with the back of a sure to leave some whole for texture .. add collard greens and mix well..slowly add remaining ingredients mixing well after each addition..Using your hands work mixture together well..if too dry add more pumpkin..if too moist add more breadcrumbs..form into desired patties and cook on a well greased outdoor grill over medium heat for approx 2-3 minutes per side until char marks appear..Serve with Southern “Chow Chow”, lettuce and grilled onion
