Winter Citrus Salad


1 large handful chopped Red Kale
1 large handful chopped Lacinato Kale
1/2 cup ruby red grapefruit wedges
1/2 cup halved Clementine wedges
1/2 cup chopped macadamia nuts
1/4 cup assorted Greek olives
1/8 cup raw cacao

Lemon Dill Dressing:
Juice of 1/2 a lemon plus zest
1 tbsp Rice wine vinegar
3/8 cup extra virgin olive oil
3/8 tsp chopped fresh dill
1 small clove minced garlic
1/4 tsp kosher salt
1/8 tsp black pepper
1/2 tbsp Dijon mustard
Whisk all and refrigerate.  Shake before serving

Directions for Salad

Add Lacinato and Red Kale to a large bowl then fold in all other ingredients. Gently coat with dressing.  Check for seasoning.  Serve immediately.
