Mumbai Burger


1 cup cooked red lentil cooled

1/2 cup cooked black beans (Slightly mashed)

1 cup chopped roast cauliflower chopped

1/3 cup chopped wilted baby spinach

1/4 cup diced red onion

1/4 cup diced red pepper

1/2 cup roasted chopped sweet potato

1/2 cup ground toasted tempeh

1/2 tsp kosher salt

1/8 tsp black pepp

1/2 tsp cumin

1 1/2 tsp curry powder

1 cup bread crumbs

1 tbsp pumpkin

1 tsp sriacha

In a sauté pan on medium heat coated with olive oil cook tempeh until just golden brown 3-5 minutes and set aside. In a large mixing bowl starting with lentils and black beans gently combine all ingredients mixing well after each addition.  If mixture is too dry add pumpkin..If mixture is too wet add additional bread crumbs.  Form into slider patties and refrigerate for at least 1 hour.  Heat a grill on medium heat well coated with a non stick spray and cook burgers 2-3 minutes per side until char marks appear.  Serve on a scratch made biscuit. Top with fresh avocado, thinly sliced mango and finish with a sweet pepper chutney.
