Black Bean, Tofu and Roasted Cauliflower Scramble

Ingredients:

1/2 Block Organic Tofu drained

1/4 cup chopped shallots

1/4 cup chopped roasted cauliflower

1/4 cup Organic Black Beans rinsed and drained

small handful baby spinach

1/2 tsp turmeric

pinch kosher salt

pinch red pepper flakes

maple syrup to garnish

Directions…In a wok or saute pan on medium/high heat saute scallions 1 minute…using your hands gently crumble tofu into scallions and mix well…add turmeric…allow to sit a few minutes to lightly brown…mix well and and cook a few more minutes…add black beans, cauliflower and baby spinach..mix well..add salt and pepper flakes…remove from heat…once spinach is wilted..serve immediatly on a toasted English muffin and drizzle with real maple syrup…Enjoy!
