4 authentic small tacos
1 block baked Sriracha Tofu thin sliced
1 Very ripe plantain cut into half inch slices
2 scallions thin sliced white only
1 ripe avocado
4 tbsp baby black lentils
1/2 red pepper thin sliced
1 clove minced garlic
1 lemon juice and zest
2 tbsp chopped chives
small handful microgreens
For plantains..coat a nonstick pan with oil on medium heat and fry plantains approx 3 minutes per side until golden brown..remove from heat and place on a plate with paper towel to remove any excess oil..sprinkle with kosher salt
For Avocado Lentil combo..In a mixing bowl combine avocado, Lentil, garlic, lemon juice and zest, chives, 1 tbsp extra virgin olive oil, 1/2 tsp of salt..using the back of a fork blend well leaving some texture..
Build Tacos…take one taco…spread some of the avocado mixture..layer the Tofu..then add plantains..top with red pepper scallions and greens..add blueberries..sprinkle with salt and repeat…Serve for breakfast with espresso…Enjoy!
