Opal Apple, Golden Beet, Dried Cherry & Fennel Slaw

1/2 head Savoy cabbage thin sliced
2 medium yellow beets peeled and thin sliced
1/2 bulb fennel thin sliced
6 scallions thin sliced, white and green
1 small bunch parsley chopped
1/2 red pepper thin sliced
1/2 red onion thin sliced
1 opal apple thin sliced
2 small handfuls of dried cherries
1 small handful organic pea shoots

Directions…In a large mixing bowl gently fold all ingredients until mixed well, cover and chill for at least one hour

Ingredients for Soy Ginger Dressing
1/4 cup low sodium Soy sauce
2 tbsp minced ginger
5 tbsp toasted toasted sesame oil
2 cloves minced garlic
1/4 cup rice wine vinegar
1 lime..juiced and zest
3 scallions thin sliced white and green
pinch red pepper flakes
1 tbsp Dijon mustard
2 tbsp light brown sugar

Whisk all together and refrigerate

Ingredients for Tahini Garlic dressing
1 lemon juice and zest
4 tbsp rice wine vinegar
1/2 cup agave nectar
1 lime juice and zest
4 tbsp tahini
1/2 tsp minced ginger
1 tsp minced garlic
pinch red pepper flakes
1/2 tsp cumin
pinch black sesame seeds
salt and pepper to taste

Whisk all ingredients until blended..If mixture is too thick gently thin with cold water..if mixture is too watery thicken with more tahini..Check for seasoning and serve..Enjoy⭐️
