CK’s Earth Day Big Mac – Grilled Zucchini, Black Bean & Artichoke Burger with Special Sauce, Lettuce, Pickles on a Sesame Seed Bun

Ingredients for Burger
1 large zucchini grilled and diced
1-15.5 oz can organic Black Beans rinsed and drained
7 ounces chopped marinated artichoke hearts
3 ounces chopped Sundried tomatoes
4 cloves roasted garlic, chopped
1/2 roasted yellow pepper diced
1/2 red onion diced and sautéed
1 1/2 cup vegan breadcrumbs
5 tbsp pumpkin purée
1 tsp dried oregano
1/2 tsp kosher salt
1/4 tsp pepper

Special Sauce
1/2 cup Vegan Mayo
14 roasted red pepper
2 tsp sweet relish
1/2 tsp yellow mustard

Directions for burger…In a large bowl combine all ingredients for burgers one at a time incorporating well after each..Form into patties to fit your rolls..Heat a grill on medium heat, well greased..Cook burgers 3-4 minutes per side until grill marks form..in a separate bowl combine relish and mustard…In a food processor blend red pepper and mayo until combined …Fold into relish and mustard..refrigerate until use..

Tips..Keep patties thin …If mixture is to dry add additional pumpkin..If too moist add more breadcrumbs..
