Tempeh, Blueberry & Pecan Salad Sandwich with Creamy Garlic Ginger Tahini Dressing

Ingredients for Sandwich…
1 8oz.block Tempeh
1 small shallot chopped
3/8 cup fresh blueberries
1/4 cup chopped pecans
1 celery rib diced
1 roasted red pepper diced

Ingredients for dressing..
1/4 cup tahini
14 cup water
4-5 chives..chopped fine
1 lemon…juice and zest
2 cloves garlic minced
1 tbsp ginger minced
2 tbsp agave nectar
salt and pepper to taste

Directions for sandwich
Heat a non stick skillet on medium heat and coat with olive oil…Slice tempeh in 8-10 slices and allow to brown on each sides…2-3 minutes..remove from heat and allow to cool. In a large bowl start by dicing tempeh into tiny cubes..fold in remaining ingredients slowly…

Directions for dressing
Combine all ingredients in a glass bowl and gently whisk until creamy and desired consistency is reached..Add more water if too thick..Check for seasoning..

Gently coat tempeh mixture and serve immediately on fresh Harvest Roll topped with microgreens…Enjoy 🍽
