Purple and Orange Springtime Carrot Salad with Medjool Dates, Baby Greens, Walnuts and Asian Ginger Chai Dressing

Ingredients for Salad..Serves 4

2 Purple carrots..quartered and thin sliced
1 orange carrot..quartered and thin sliced
1/4 red onion..thin sliced
3 pitted medjool dates chopped
1/4 red pepper thin sliced
1/4 cup chopped walnuts
1 handful of blended baby greens
1 tbsp sesame seeds..extra for garnish

Ingredients for dressing
3 Clive’s chopped garlic
1 tbsp fresh ginger minced
2 tbsp chopped scallions..white only
1/4 cup rice wine vinegar
3/4 tsp Dijon mustard
2 tbsp light brown sugar
1 tbsp agave nectar
2 tbsp low sodium Soy sauce
1 tbsp toasted sesame oil
2 tbsp chia seeds
1 tbsp black sesame seeds
1/2 cup extra virgin olive oil
1 tsp kosher salt
1/2 tsp ground pepper….add all to a sealed glass jar..mix well and refrigerate

Directions for Salad..in a large mixing bowl starting with carrots..fold in all ingredients with greens last..Gently coat with dressing and Serve..Garnish with extra sesame seeds..Enjoy🍴

tips..If Purple carrots are not available fresh organic orange can be substituted..Pecans can also be subs for walnuts.
