Melon and Roasted Chickpea Salad with Fresh Mint and a Sweet & Spicy Lime Dressing served with Toasted Pita

Ingredients..for salad

30 oz of fresh cooked chickpeas or 2-15 oz organic cans drained and rinsed
1/4 yellow pepper thin sliced
1/4 red pepper thin sliced
1/4 honeydew..small bite sized cubes
1/4 cantaloupe..small bite size pieces
1/4 english cucumber thin sliced
1/2 small red onion thin sliced
1 small bunch fresh mint torn into small pieces

Ingredients for dressing
1 lime juice and zest
2 cloves minced garlic
1/2 tsp grated ginger
1 tbsp agave nectar
4 tbsp extra virgin olive oil
1/2 tsp ground cumin
1 tbsp rice wine vinegar
pinch red pepper flakes
salt and pepper to taste

Directions for dressing..In a medium sized glass bowl combine all ingredients and whisk well and refrigerate

Directions for salad..Preheat oven to 450 degrees and coat cooked chickpeas with extra virgin olive oil, kosher salt and pepper and bake approx 25 minutes and remove and let cool..in a large glass bowl combine chickpeas with remaining ingredients and gently fold and add dressing to coat..Check for seasoning ..Enjoy🍴

Tips..Serve with toasted pita or flatbread and your favorite Chilled wine
