Baby Kale, Clementine & Red Quinoa Salad with Orange/Lemon Poppy Dressing

Ingredients..Serves 6
1/2 lb baby kale
4 radishes thin sliced
3/4 cup whole mini golden tomatoes
1/4 red onion thin sliced
1/2 poblano pepper thin sliced
2 clementines cut into 1 inch pieces
1 large handful of pine nuts
1 cup cooked red quinoa
small handful assorted Greek olives
salt and pepper to taste

Dressing..makes about 1 cup
3/4 cup extra virgin olive oil
1/4 cup rice wine vinegar
juice and zest of 1 lemon
juice and zest of 1 orange
1/2 tbsp agave nectar
2 cloves of minced garlic
1 tbsp poppy seeds
salt and pepper to taste

Directions..in a large mixing bowl starting with greens..gently fold in each ingredient one at a time

Directions for dressing..In an airtight container combine all ingredients and shake well..refrigerate for 1 hour..

Tips..garnish with zest of orange and lemon..Serve with avocado toast..Enjoy!
