Pumpkin, Shiitake, Kale & Pecan Dumplings

Ingredients for filling
4 scallions thin sliced..white and green
3 cloves minced garlic
2 tsp minced ginger
2 cups thin sliced shiitake mushroom
1/4 of a yellow pepper diced
2 1/2 cups uncooked chopped and packed organic kale
12 ounces of pumpkin
1/2 tsp nutmeg
1/2 tsp kosher salt
1/4 tsp pepper

Ingredients for wrappers
2 cups all purpose flour
3/4 cup very hot water
pinch of salt
1/2 tsp olive oil

Directions..for the filling..Heat a nonstick pan over medium heat coated with olive oil and add scallions, garlic and ginger and sautee 2 minutes…add shiitakes and sautee another 5 minutes…add remaining ingredients except for pumpkin and saute a few more minutes until kale is wilted and set aside..add to a large bowl and fold in pumpkin..cover and refrigerate ..

Once dumplings are steamed..heat a nonstick pan over medium heat coated with olive oil..slice 3 cloves of garlic thin and sautee 2 minutes..gently lay in steamed dumplings and allow to brown on each side..approx 2-3 minutes..serve immediately !..Enjoy

Tips..make filling a day early and store in an airtight container refrigerated..Dough can also be made a day before..allow to come to room temp before rolling out
