Pac Rim Slaw, with a Creamy Sesame Ginger Dressing

Ingredients..(serves 6-8)

2 cups baby Bok Choy chopped
1 bunch scallions..thin sliced (white and green)
1/2 small head purple cabbage thin sliced
1/2 small head Savoy cabbage thin sliced
1 Red Bell Pepper thin sliced
1 Orange Pepper thin sliced
1/4 red onion thin sliced
1 large handful of snow peas tips removed
1 Asian Pear..thin sliced
1 cup of cashews…rough chop
1 tbsp sesame seeds
1 tbsp black sesame seeds
1/4 cup chopped cilantro ..

1/2 cup tahini
6 tbsp low sodium soy sauce
5 tbsp toasted sesame oil
2 limes..juiced and zested
3 tbsp real maple syrup
4 tsp rice wine vinegar
5 cloves minced garlic
2 1/2 tsp minced ginger
pinch red pepper flakes

Instructions..In a large mixing bowl fold all salad ingredients a seperate small bowl place dressing ingredients in and whisk well until all ingredients are incorporated..Drizzle over salad and mix well..allow to sit 10 minutes chilled..then serve..Top with more cashews and sesame seeds..Enjoy!
