Grilled Butternut Squash, Black Lentil, Poblano & Walnut Burger

Ingredients..(Makes 6)
2 cups cooked baby black lentils..
2 cups cooked, diced butternut squash
2 roasted poblano peppers diced..seeds removed
1 cup chopped walnuts
5 scallions..thin sliced.white and green
1 1/2 cup Breadcrumbs
6 tbsp pumpkin
1 tsp nutmeg
1 tsp kosher salt
1/2 tsp black pepper

Directions..In a large mixing bowl starting with lentils..fold in squash, Poblanos, and walnuts …ad remaining ingredients and mix well..Form into 6 patties and refrigerate at least 1 hour…Heat an outdoor grill over medium heat and grease well..lay the burgers down and grill 4-5 minutes per side…Dress with our recommended toppings…Enjoy🍴

Tips..Do not overheat grill…Add more breadcrumbs if mixture is too moist.
