STARFISH Shaped, Feather Light and Fluffy Blueberry Pancakes Dusted with Powdered Sugar, Finished with Warm Blueberry Syrup and fresh Blueberries


2 cups sifted all purpose flour
2 Tbsp granulated sugar
4 tsp baking powder
3/8 tsp kosher salt
2 cups organic Soymilk
2 Tbsp fresh lemon juice
4 Tbsp coconut oil
Handful fresh blueberries
Powdered sugar for garnish

Directions..preheat griddle to medium heat..Combine flour, sugar, baking powder and salt in a medium a large bowl combine Soymilk and lemon juice and whisk briskly to create “Buttermilk”..allow to stand for 12 minutes..add coconut oil along with “Buttermilk” directly to dry ingredients..mix well until smooth and clump free…spoon batter onto greased griddle and drop in a few blueberries toward the center…when bubbles form and edges are lightly browned, flip and allow other side to brown..remove from heat..using a star shaped cookie cutter cut pancakes and stack neatly..dust with powdered sugar and garnish with fresh blueberries and top with warmed blueberry syrup..Enjoy!..Serves 4

Tips..warm your oven to keep pancakes hot until serving..freeze any extras in an air tight container..
