8 Oz. Block Organic Tempeh crumbled
1/2 cup roasted Red Pepper
3 scallions (green and white) thin sliced
1/2 cup italian vegan bread crumbs
3 cloves sliced garlic
1 tsp dried oregano
2 tsp pumpkin purée
1/2 tsp kosher salt
1/4 tsp red pepper flakes
1 Tbsp extra virgin Olive oil
Preheat oven to 400 degrees…in a food processor combine all ingredients except pumpkin purée and pulse well until all ingredients are incorporated..one teaspoon at a time fold in pumpkin purée to bind..use a little more or less only until mixture binds together. Bake for approx 25 minutes.
Use toothpicks to easily grab..arrange on a nice white platter..serve immediately over your favorite marinara sauce..garnish with fresh basil..Enjoy!
Tips..do not make mixture too wet or dry..”Bites” should just hold together..will yield approx 12-14 “Bites”
