Mixed Greens Tossed with Fresh Blackberries and Raspberries, Shaved Asparagus, Thin Sliced Red Onion, Diced Avocado and Crunchy Cinnamon Almonds Lemon Cilantro Vinaigrette

Ingredients for Salad
2 Large handfuls of a combo of ( Baby Kale, Baby spinach and Red Chard)
10 stalks of fresh Asparagus, shaved
1 diced Avocado
1/2 red onion thin sliced
small handful fresh Organic Blackberries
small handful fresh Organic Rasberries
1/4 cup Cinnamon almonds
1/2 seeded diced Cucumber

Ingredients for Dressing
1 bunch fresh Cilantro
1/2 cup extra virgin Olive oil
1 lemon, juice and zest
3 tsp chopped garlic
3/8 tsp kosher salt
2 tsp agave nectar
2 tsp Dijon mustard
4 Tbsp Champagne Vinegar

Directions for Salad…using a vegetable peeler, gently shave long strips of asparagus..in a large bowl combine all ingredients and “gently” fold together..leave some extra almonds and avocado for garnish..

Directions for Dressing…combine all ingredients (except Olive oil) in a food processor and pulse a few times..then gently drizzle in Olive oil until well incorporated..gently toss with greens to coat..serve immediately …Serve with grilled Ciabatta..Enjoy!!
