Baby Potato Salad with Crisp Colorful Raddichio, Sweet Yellow Pepper, Capers and Poppy Seeds with Sesame Chive Vinaigrette

Ingredients
1 lb. Tiny Baby Potatoes (just cooked through)
1/2 Yellow Pepper thin sliced
5 scallions (white and green)..thin sliced
small handful a raddichio thin sliced
2 tsp Capers
1/2 tsp red pepper flakes
2 tsp Poppy Seeds
salt and pepper to taste

Vinaigrette
3 Tbsp Toasted Sesame Oil
1/4 cup Rice Wine Vinegar
1 Tbsp Soy Sauce
2 Tbsp thin sliced Chives
1 Tbsp “Real” Maple Syrup
1 tsp minced Garlic
1/2 tsp minced Ginger

Directions

Allow potatoes to chill..In a large mixing bowl combine potatoes and slowly fold in remaining ingredients..do not overmix..In a separate bowl combine all ingredients except sesame oil..slowly drizzle in Sesame oil and whisk well until fully incorporated.. Drizzle over Potato Salad to coat..check seasoning and serve immediately!…Enjoy!!..

Tips..Most potatoes can be substituted..Yukon Gold work very well..do not over or undercook potatoes..Garnish with chives and poppy seeds..
