Crushed Chickpea & Sweet Mission Fig Sandwich on Russian Black Bread

Crushed Chickpea and Sweet Mission Figs with a Creamy Lemon And Roasted Garlic Aioli with Thin Sliced Yellow Tomato, Sliced Red Onion and Crunchy Organic Pea Shoots between Freshly Baked Seeded Russian Black Bread


3 cups high quality Chickpeas..rinsed drained and slightly crushed with back of fork or pulsed in food processor
1 cup diced California Mission Figs
4 Scallions thin sliced (use both White and Green)
1 large celery stalk..small dice
1 small handful of chopped parsley
1 large Organic Yellow Tomato thin sliced
1 handful Organic Pea Shoots for topping
1/2 Red Onion thin sliced
1 loaf fresh Seeded Russian Black Bread

Ingredients for Roasted Garlic and Lemon Aioli
1 bulb of garlic peeled
Extra Virgin Olive oil
1/4 tsp kosher salt
1/4 tsp black pepper
1 cup Vegan Mayo
small handful of chopped parsley
juice and zest of 1 lemon
Capers to taste (optional)

Directions for aioli..preheat oven to 400 degrees ..toss garlic with with Olive oil to coat and salt and pepper..seal well in foil and bake for for 35 minutes..remove and let a food processor add remaining ingredients with cooled garlic and pulse until well combined..refrigerate until ready to use..

Directions for a large bowl combine chickpeas, figs, scallions parsley and celery..fold in Roasted Garlic Aioli..layer generous amount on bread and top with yellow tomato, pea shoots and red onion..sprinkle with kosher salt and cracked pepper..serve with sweet gherkins and fresh seasonal fruit!…ENJOY!
