Indian Spiced Roasted Chickpeas: CK Rapid Fire Recipe


2 Fifteen-ounce cans of organic chickpeas
3 tbsp extra virgin olive oil
1½ tsp smoked paprika
1½ tsp ground cumin
1½ tsp curry powder
Salt and pepper  to taste


Preheat oven to 400 degrees.  Drain and rinse chickpeas.  In a large mixing bowl all ingredients and mix well.  Spread chickpea mixture evenly onto a baking pan covered with aluminum foil. Roast in oven for 30 minutes.  Remove and serve warm or chilled.


Great as a topping for salads, a garnish for soups, or just on their own as a high protein snack.
